Can you help with a question about baking madeleines in one of those silicone "pans"?
Shortly after I bought my silicone madeleine pan, I loaned the recipe that came with it to a friend and it disappeared. I'm not totally sure about this, but I think the instructions differed slightly from a standard madeleine recipe (for one thing, I think you're supposed to prep the pan differently). Help! Without a reliable recipe my madeleine tray is pretty much useless. I believe my pan/tray is a Silpat, but I'm not sure about that either--no manufacturer's mark on the bottom. I'd be so grateful for any suggestions and/or recipes that use a silicon tray. Thanks.
